Holiday Cherry-Apple Pork Chops

We enjoyed these the other night and I wanted to pass it along. Here’s what you’ll need:

3 boneless loin pork chops (we got ours from Trader Joe’s).

2 tablespoons Trader Joe’s Organic Virgin Coconut Oil.

2 Red Delicious apples (thinly sliced).

1/2 cup seedless cherries (sliced).

1/2 teaspoon pumpkin pie spice.

 1 orange

Directions:

  1. Season pork chops to taste.
  2. Place the sliced apples and the sliced cherries in a small saucepan with juice squeezed from the orange. Sprinkle the pumpkin pie spice on top and cook over medium heat until soft.
  3. Heat a medium sized skillet over medium-high heat. Add coconut oil. Add seasoned pork chops and cook 2 minutes on each side, or until browned. Cover, reduce heat to medium, and cook for 7 minutes on each side or until done (our pork chops were over an inch thick. If yours are thinner, this time can probably be reduced to 6 minutes).
  4. When the pork chops are done, remove them from the pan and keep them warm, but do not drain the pan. Stir the apple-cherrie mixture into the saucepan over medium heat and stir them into the juices from the pork chops for 1-2 minutes.
  5. Serve with the apple-cherrie sauce spooned over the pork chops, along with your favorite sides and table wine. We enjoyed ours with spinach and green beans.

Combine apples, cherries, pumpkin spice, and orange juice and simmer until soft.

 

Cook pork chops for 2 minutes on each side. Cover and cook an additional 7 minutes per side.

 

Spoon the apple-cherrie mixture over the pork chops and serve with favorite sides and beverage.

Oven-Seared Steaks

Here’s a steak recipe that rocks. Here’s what you’ll need to pull this off:

  • Steaks. This should be obvious, but I had to say it. I used Black Angus Top Sirloin Filets from Trader Joe’s. They come in a 3-pack and one of them is always thinner than the other two, which presents a challenge. But I just ignored it and it seemed to not matter as far as cooking time.
  • 10-12 inch cast iron skillet.
  • Canola Oil
  • Salt and Ground Black Pepper

Directions

  • Place dry cast iron skillet in oven and heat oven to 500 degrees Fahrenheit. Coat the steak lightly with Canola oil and season with salt and pepper.
  • When the oven reaches 500 degrees, remove skillet and immediately place empty, dry skillet on burner over high heat for 5 minutes,
  • After 5 minutes, immediately place the steaks in the skillet for 30 seconds without moving.
  • Turn steaks with tongs and cook another 30 seconds.
